Chocolate Pear Tart with Orange Sauce





An autumn dessert for all seasons!!!

Ingredients  serving 8


Dough
100gm                      White flour
50gm                        Butter
1                               Egg yolk
1ts                            Yeast
1ts                            Grated lemon peel
pinch of salt

Filling
3                              Medium pears
1tbs                         Sugar
200gm                     Dark chocolate
200ml                      Cream
50gm                       Sugar
2                              Egg yolk
50gm                       Ground almonds
30gm                       Sliced almonds
Butter and ground almonds for the baking tin

Sauce
Juice of 3 oranges
Corn starch to thicken
Limoncello or grand marnier or cointreau to taste.

Tofu,Polenta,Olive Patè

Perfect combination for autumn! Easy to make vegan just change the butter with Olive oil.!

Tofu                           500gm
Soyu                          200ml
Red wine                   200ml
Water                        150ml
Extra virgin olive oil    2tbs

Polenta                       250gm
Butter                         40gm
Extra virgin olive oil     3tbs


Green sweet olives      200gm
Basil leaves                 3
Capers                        4pices
Extra virgin olive oill     4tbs
Thyme                         to taste

Shallots                        2
Butter                          20gm
Brown sugar                2tsp

Sundryed tomato
Pomegranate

Open Ravioli

Ingredients


Pasta
80g                 Semolina
20g                 White flour
1                     Egg
8                     Parsley leaves




Filling
300g               Mushrooms thin slices
10g                 Dry porcini mushrooms soaked in hot water and chopped
50ml               White wine
50g                 Pistachios grinded
50g                 Cashew grinded
1clove            Garlic
1tbs                Chopped thyme & parsley
100ml             Cream


Sauce
200ml             Red wine
2                     Bay leaves
4                     Pepper corn
4                     Whole cloves
1                     Cinnamon stick
4                     Juniper berries
1                     Chopped shallot
200ml             Cream
1tsp                 Maizena or corn starch


For the filling and sauce: salt and pepper to taste

45 gm                White Flour
1ts                     Yeast for dessert

Strawberry Tartar    
250 gm              Strawberries
1tbs                   Sugar
To Taste            Grand Marnier


Vanilla Sauce
75 ml               Milk  
250 ml             Cream
4 pc                 Egg Yolks
1 pc                 Vanilla Stick
60 gm              Sugar
To Garnish       Dark Chocolate 70% Cocoa
